Meatball Entrees

Vegetable Beef Meatball Soup

Makes: 6 servings

Ingredients
1 tablespoon vegetable oil
1 medium onion, chopped (about 1 cup)
1 (1 lb.) bag frozen mixed vegetables
1/2 cup uncooked elbow macaroni
2 (14.5 ounce each) cans beef broth
2 cups water
1/4 teaspoon dried thyme leaves
1 (14.5 ounce) can diced tomatoes
1 (16 ounce) package Armour® Beef Bite Size Meatballs, thawed
1/2 teaspoon salt
1/8 teaspoon ground black pepper


Heat oil in large saucepan over medium heat. Add onion; cook and stir 3 minutes.

Add frozen vegetables, macaroni, broth, water and thyme; bring to boil. Reduce heat, cover and simmer 7 minutes or until pasta is done.

Add tomatoes, meatballs, salt and pepper; return to a boil and simmer 5 minutes more or until heated through.
