Meatball Entrees
Italian Meatballs & Peppers Linguini

Makes: 6 servings
Ingredients
8 ounces of uncooked linguini pasta
2 teaspoons olive oil
1/2 cup chopped onion
1 (14.5 ounce) can diced tomatoes with basil, garlic and oregano, undrained
1 each: medium green, red and yellow bell pepper, cut into strips
1 (8 ounce) can tomato sauce
1 (16 ounce) package Armour® Italian Style Bite Size Meatballs, thawed
1/4 cup (1 ounce) grated fresh Parmesan cheese
Cook pasta according to package directions; drain and keep warm.
In large skillet heat oil over medium heat. Add onions and peppers; cook 5 to 6 minutes or until crisp-tender, stirring occasionally. Stir in tomatoes, tomato sauce and meatballs. Cook covered 6 to 8 minutes or until heated through.
Place pasta in large bowl; pour meatball mixture over pasta tossing to coat. Sprinkle with cheese. Serve immediately.
